Prosecco (also known as Glera), is a very old variety originating from Veneto in Italy where it is used to produce sparkling wines also called Prosecco. Destemmed fruit was basket pressed with full solids to tank for wild fermentation and maturation on lees for 9 months. The wine is then moved to a pressure tank where the bubbles are created
